Deliciously Evil

I have long ‘planned’ to make a cob dip, I love the idea of them but every time I looked at a recipe I would screw my nose up and be on my way. I like things to be bland, boring and sour cream? Ick.

Recently, I happened upon Amy’s Partay Cob recipe; just in time to be thinking about what to serve for our family card night and on a whim I decided I was going to branch out. I was going to go crazy. I figured it would keep the hungry, card playing hoards happy even if I didn’t like it.

I got all my ingredients and went to work, using Amy’s recipe as a base. Here are the fillings I chose;

2 x small tubs sour cream
1/2 capsicum
1/2 brown onion

After ripping out all the soft, delicious smelling inside of my loaf I popped the bread the oven on 180 degrees while I quickly cut up and cooked the bacon, capsicum and onion together in the fry pan. I emptied the sour cream into a microwave proof bowl and added my cooked bits and plenty of cheese. I mixed it all together and put it all in the microwave for 2 minutes (wasn’t sure if this step should be skipped since I did cook the ingredients first, so I just did a quick zap).

I’d forgotten my bread in the oven and had to take all the little dipping bits off the plate, as they were plenty crunchy. I filled the empty loaf with my mixture and put it in the oven for a further 20 minutes, until the bread was nicely crunchy and some of the cheese had browned.

Once the time was up, I got it out and plated up (thanks Master Chef). I probably should have left it in the oven as some of our guests hadn’t arrived and I could not keep the naughty people who were here (ie James, Kirsty and Uncle Max) out of it!!

It went down a treat. Even I loved it. So much so that I made some little single buns (thanks for the idea, Amy) over Easter; adding mushrooms and BBQ chicken to the mix. Ohhh soooo good. Just writing this now, I am having major cravings.

And thanks to stepping out and going crazy I have discovered sour cream (I know, a bit slow here). I made a pasta sauce the other night and it was gorgeous.
