In the lead up to birthdays there is much chatter about parties/celebrations, possible gifts, how old someone is turning and the all important planning of the Birthday Dinner.

The birthday boy or girl is given the opportunity to ask for whatever they want cooked and it’s always something they enjoy immensely. In December, for Kahlei’s 7th birthday, she had chosen nachos for her special dinner. She chose it well in advance and talked about it a lot until a day or so before, when she changed her mind and asked for meatballs.

When the day arrived, she was still unsure – she wanted both and couldn’t choose, so I set out to make her nacho inspired meatballs in the hope that it would cover all the bases!

Thankfully, it hit the spot and got thumbs up all round. The perfect birthday dinner treat!

Preheat your oven to 200 degrees celcius.

Place bread in the bowl fitted with the ultra blade  and mix for 10 seconds on speed 10, until you have lovely fine bread crumbs. Add your meat, Parmesan, egg, zucchini and season with salt and pepper if desired.

Mix at speed 6 for 30 seconds.

Roll your mixture into balls and pop in your steaming basket. Fill your bowl to the 0.7 L marker, place the steam basket and launch the steam program at 100 degrees for 15 minutes.

Once cooked, remove meatballs and place in an ovenproof dish. Mix your sour cream and salsa (I just used a mild Old El Paso for this one) together.

Cover meatballs with your sauce and top with Mozzarella cheese. Place in the oven until cheese is melted and golden (approx 15 – 20mins).

Serve with your usual nacho toppings and enjoy!

We had salad, guacamole for those who like it and Mission tortilla chips.

Ingredients
  1. Meatball Ingredients
  2. 60 grams grated Parmesan
  3. 1 - 2 slices multigrain bread
  4. 1 egg
  5. 600 grams beef mince
  6. 1 small zucchini grated (optional)
  7. Sauce
  8. 200ml sour cream
  9. 250ml Salsa
  10. Mozzarella cheese
Instructions
